Here at Absolutely London, we’re partial to a glass or two of champagne. But while we know what we like, our knowledge about the bubbles in our flute is limited. All this is about to change. From the 20-23 October, Dom Pérignon’s ‘Transformation’ experience on South Molton Street, Mayfair, will educate Londoners on the history and alchemy behind the creation of the iconic vintage champagnes.
DP is only ever made using the best grapes from an exceptional year’s harvest and as a result the brand is synonymous with sophistication and class. Transforming their creation in the cellars over time, each of their vintages evolve in a succession of peaks known as plénitudes that offer different expressions of the same champagne.
So that you can really experience the transformation – from the first plénitude of 7 years (P1) to the second (P2) after 15 years – Dom Pérignon has partnered with Claridge’s to offer the ultimate gastronomy experience. This sees Richard Geoffroy, Dom Pérignon’s Cellar Master and Simon Rogan, Chef Patron of Fera at Claridge’s, collaborate to produce exclusive Dom Pérignon P2 menus and tastings.
Speaking about the P2 gastronomy experiences, Cellar Master Richard Geoffroy, says:
“We have worked closely with Simon Rogan, who has created an exquisite [limited edition] lunch and dinner menu to celebrate Dom Pérignon P2. Each course has been carefully designed to complement the characteristics of the Dom Pérignon vintages and I will lead diners through the wine’s singularity and the effects on the palate and the senses.”
